This Sausage Sheet Pan Dinner with Cabbage and Carrots is an easy and delicious meal, made on one pan in about 45 minutes. You’re going to love it for busy weeknights!

EASY MEALS. There are never enough of those, right? My son, N, is in Kindergarten now. He’s only going three days a week right now (he’ll progress to 4 around Thanksgiving and then will be going five days a week by the end of the school year), and I really did think I was going to haveso much timeto work. I thought, “This is going to be life changing, I have three days where both kids are at school!”

Who was I trying to kid?

School meetings, recess duty, field trips, volunteering in the classroom, etc. I should just ride the bus to school with them, I feel like I’m always there!

(Disclaimer – I’m happy to be there and love that I get to be involved. It just takes time, like everything else.)

Then when I’m home, there’s always housework to do and this and that and getting ready to have people over, etc. etc. etc.

Ithink once he’s going five days a week, I might be able to get into more of a routine, but honestly I’m not really holding my breath for that! Also it’s a little ridiculous how much I miss them while they’re at school so I’m not in a giant hurry to get to the five day schedule.

Then of course Ben’s hours are as crazy as always and to be honest, when dinner rolls around, I’m tired! An easy recipe that doesn’t make many dishes dirty is always appreciated.

I’m not a consistent meal planner (I wish I was better at it) but I often will pick up turkey Italian sausage from the store because I know there’s so much I can do with it. We can keep things straightforward and grill it, or I can make a sheet pan dinner with it like this recipe with cabbage or this roasted Italian sausage with whatever vegetables I have on hand.

Or, I can take it out of the casing for endless options. Whether I’m craving a cozy turkey sausage stew with white beans, or a quick Instant Pot pasta recipe, I can make it happen all with this one versatile (and healthy!) ingredient.

About this sheet pan dinner

This is a super easy dinner that you can make with any vegetables you have on hand. You can also add potatoes if you’re a meat and potatoes type of person.

I like the fresh flavor that the dill adds, but try this with a sprinkle of oregano or basil, especially if you’re using Italian sausage.

If you want to substitute another type of sausage, use uncooked sausages. Bratwurst is great, either pork or turkey. If you only have pre-cooked sausages, add them about halfway through the baking time.

This sausage sheet pan dinner is an easy and delicious meal complete with roasted potatoes, onion, carrots, and bell peppers, all cooked on one pan in just 35 minutes. You’re going to love it for busy weeknights!

Ingredients

  • 1 pkg. (10 oz.) fully cooked sausage links (we like chicken sausage, see note)
  • 1 large bell pepper, cut into 1-inch pieces (any color)
  • ½ large red onion, cut into 1-inch pieces
  • 3 medium russet potatoes, peeled and cut into ½-inch pieces (about 1 pound potatoes)
  • 3 medium carrots, peeled and cut into ¼-inch slices (8 oz. carrots)
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt, or to taste
  • ¼ teaspoon coarse ground black pepper, or to taste

Instructions

  • Preheat oven to 425ºF. Prepare a rimmed sheet pan (appr. 13 x 18 inches) by spraying it with olive oil spray or cooking spray.

  • Cut sausage into ½ inch slices. Place in large bowl. Add peppers, onions, potatoes, carrots, olive oil, salt, and pepper. Stir to coat all ingredients in oil, salt, and pepper.

  • Spread sausages and vegetables on the prepared pan in an even single layer.

  • Cook for 20 minutes. Remove from oven, stir, and spread back into an even layer. Continue cooking for 15 minutes or until vegetables and potatoes are tender, and sausage is golden brown.

  • Serve immediately.

Notes

  • You can use different vegetables in this recipe. If you’re using harder vegetables that take longer to cook, cut them in smaller pieces. Leave the softer vegetables larger. This will ensure that everything cooks at the same rate.
  • Any fully-cooked sausage link can be used. Smoked sausage is delicious in this sheet pan dinner. You can also use vegetarian or vegan sausage. I recommend adding plant-based sausage during the last 15 minutes of cooking time.
